Andy's Greens Recipe
Serve with Black-Peppered Butter Beans
Serves: 3-4
Time: 30 Minutes
Note: MSG is used in this recipe to add Umami flavor which is very pleasant considering the dish is Vegan.
1 Lb Collard or other Greens (Kale would work)
2 Leeks (white parts, sliced horizontally to 1/16th inch)
2 Small Tomatoes sliced to 1/2 inch chunks
2-3 Cloves Garlic sliced/pressed
1/2 Tbsp dried Oregano
1/2 Tbsp dried Basil
1-2 Tsp MSG
1 Tsp Salt
1/4 Tsp Black Pepper
Boil the Greens until they're almost tender
Set a LARGE pan to medium
Heat Oil in the pan
Add the Garlic and Leeks
Cook the Garlic and Leeks for a bit of time
Add the remaining ingredients
Turn/cover until the Greens are fully tender
